Bacon-Wrapped Sweet Potato Bites
- 1 lb sweet potatoes
- 10 strips pasture-raised bacon, sliced in half
- 1/4 t paprika
- 2 t avocado oil
- 1/8 t cinnamon
- 1/4 t sea salt
- 1/4 t black pepper
Chop the sweet potatoes into one-inch rounds. To easily wrap the bacon around them, make sure you choose skinny sweet potatoes instead of the large ones. Plus, thick-cut bacon will be ideal.
Toss them in avocado oil, paprika, cinnamon, sea salt, and black pepper.
When fully coated, wrap half a bacon strip around the edge of each round, slightly overlapping the ends. Secure with a toothpick.
Bake them for 35-40 minutes. Set them on a paper towel for a few minutes before you serve them.
Some people prefer substituting the sweet potatoes with white potatoes.
