I believe we all simply adore sweet potatoes. They are delicious, nutritious, and versatile! Apart from being incredibly tasty, they also boost health in various ways!
Sweet potatoes promote gut health, support healthy vision, boost the function of the brain, strengthen the immune system, and have anti-cancer properties!
Yet, have you ever tried them wrapped in bacon? Try these two-ingredient Potato Bacon Bites and you will be charmed!
Wrapped Sweet Potatoes In Bacon Bites
- 1 lb sweet potatoes
- 10 strips pasture-raised bacon, sliced in half
- 1/4 t paprika
- 2 t avocado oil
- 1/8 t cinnamon
- 1/4 t sea salt
- 1/4 t black pepper
Chop the potatoes into one-inch rounds. To easily wrap the bacon around them, make sure you choose skinny sweet potatoes instead of the large ones. Plus, thick-cut bacon will be ideal.
Toss them in avocado oil, paprika, cinnamon, sea salt, and black pepper.
When fully coated, wrap half a bacon strip around the edge of each round, slightly overlapping the ends. Secure with a toothpick.
Bake them for 35-40 minutes. Set them on a paper towel for a few minutes before you serve them.
Some people prefer substituting the sweet potatoes with white potatoes.
Yet, in this way, the recipe is paleo-friendly. Sweet potatoes are richer in fiber and nutrients, such as vitamin A, which is essential for good skin and eye health. Additionally, they will not elevate your blood sugar levels and will fit any low-carb diet plan.
