Preparation:

Boil two cups of water in a saucepan. Add the ginger, reduce the heat to medium-low, and leave the ginger simmer for 5 minutes. Then, remove the saucepan from the heat and leave for 20 minutes. Using a fine mesh strainer, strain the liquid and remove the ginger pieces.

In another saucepan, make the simple syrup by dissolving 1 cup of sugar into 1 cup of boiling water.

Now mix 1/2 cup of ginger water with 1/3 cup of the simple syrup and 1/2 cup of club soda. Sweeten with honey to taste, and you can also add some lime juice to taste.
